Dish of the Week, 22nd May 2018 – Eggless Whole Wheat Choco Chip Muffins by Chef Sonia

Hello, Foodies and Buddies!

This week’s Dish of the Week ticks all the boxes! These Eggless Whole Wheat Choco Chip Muffins by Chef Sonia are healthy, tasty, decadent, and even vegetarian! It is the best of all worlds, without a shadow of a doubt.

Chef Sonia created these beauties because of her concerns about unhealthy snacks. She says, “I am a health-conscious lady, and I am also vegetarian (no eggs). I had a very hard time enjoying a sweet snack like muffins or cakes because all ones available on the market always contain and smell of eggs.”

“Not just that, they would also contain maida, white sugar, emulsifiers, stabilisers, preservatives, and other things that I know are not good for me and my family. So I came up with the idea of a healthy sweet snack that my family and I can really enjoy, whenever they want, without any guilt.”

This dish is one of Chef Sonia’s personal favourites – as she is a chocolate lover herself – but it’s not just restricted to her. She describes how this amazing dish came together:

“While at home or on travel, we prefer to have a healthy snack for the family. I have been baking (for family) for many years.  When my son and daughter return back from school they are always hungry and they want snacks so I wanted them to enjoy a healthy snack. And while experimenting with a few variants we came up with the Eggless Whole Wheat Chocolate Choco-Chip Muffins.”

Making a delicious snack like this into something healthy has its own set of challenges which Chef Sonia told us about.

I am quite particular of what I serve to my children, and I make no exception in the quality of the snacks served to my customers. So, to make it the healthiest possible, and enjoyable at the same time, I bake with wheat flour instead of refined flour, good quality brown sugar (not caramelised) to replace refined white sugar and the best brand of cocoa powder to make our muffins tastier and guilt-free.”

“Equally important, we don’t use butter, or condensed milk,  etc. without which eggless baking is very difficult. Also, to make the dish top-quality, we use branded, studied, and tested products only.”

“It was not easy to bake a healthy, yet enjoyable snack, and of course we had to do many iterations and experimentation to get to where it is today,” she recalls.

 

Chef Sonia even provided a list of ingredients she uses for these delicious Muffins, listing them out, “Wheat flour, cocoa powder, sunflower oil, chocolate chips, brown sugar, etc.”

Chef Sonia also has big plans for her future on FoodyBuddy. She said, “It gives me a lot of happiness to share a few more healthy snacks and desserts like our Cake In A Jar series, Oats Dates Cake, Healthy Red Velvet Cupcakes and many more.”

“I am also very excited to introduce our very new series of Cold-Pressed Juices. No water, no sugar, no preservatives, just 100% juice. Again, this was all for the family, and I will be happy if others also could enjoy these healthy options.”

And in closing, Chef Sonia had some truly lovely words saying, “We are a family of four, and we are all quite busy with our daily chores. My daughter too actively supports me in these healthy baking ideas and activities. This is not a business venture, I  just enjoy baking and providing a healthy snack for our family and friends.

“I am very thankful to Foody Buddy for creating this platform for individuals like me, who enjoy what they do, and at the same time, it gives us an opportunity to showcase what we do. A special thanks to few of my customers, who have become friends over the period, for completely trusting me.”
