Hello, Foodies and Buddies!
With Mango Season in full effect, we thought we should be bringing you one of the most refreshing mango-based beverages in the world as our dish of the week. Chef Urmila Nain’s famous Aam Panna is that perfect dish for a hot summer afternoon!
In Chef Urmila’s own words Aam Panna is “an Indian drink renowned for its heat-resistant properties. It is made from green mangoes and is yellow to very light green in color, and is consumed as a tasty and healthy beverage to fight against the intense Indian summer heat. In most instances, mint leaves are added which enhances the green colour.”
It is one of Chef Urmila’s favourite dishes for a variety of reasons. Not only is it a great health drink believed to increase resistance against tuberculosis, anaemia, cholera and dysentery, but it also has a special significance to her.
“Well, this drink reminds of my childhood in Haryana. As kids, we never used to care for the scorching heat and still play in the sun. My mother used to prepare Aam Panna and call us to drink it. We used to race to grab the mug. Every time I prepare this, I relive that part of my childhood,” says Chef Urmila recalling fond memories.
Being the wonderful person that she is, Chef Urmila even provided us with a recipe for her delicious Aam Panna! Here it is:
1. Boil green mangoes and mash them.
2. Make sugar syrup separately and keep aside to cool.
3. Mix both the mash mango pulp and the sugar syrup.
4. Add the paste of fresh green mint leaves (Pudina) and black salt (Kala Namak).
5. Serve chilled. (Avoid adding ice as it dilutes the beverage).
You must take caution, though, as there is a challenge involved with this dish as Chef Urmila explains: “This is a fairly easy drink to prepare but one must keep in mind that the sourness and sweetness should be perfectly balanced to bring out the real flavours.”
