Dish of the Week, 12th March 2019 – Pizza Paratha by Chef Rekha Maurya

Our Dish of the Week column returns with an innovative new Dish from Chef Rekha Maurya – Pizza Parath!

What is Pizza Paratha you ask? Chef Rekha answers, “Pizza Parantha is a unique fusion dish with a combination of North Indian paratha recipe and Italian pizza recipe. These parathas are made with an innovative recipe replacing the monotonous roti or chapati for any meal. It is very famous amongst kids!”

Chef Rekha also explains the dish’s significance to her saying, “This innovative fusion dish does have significance for me due to its popularity amongst kids of all age group as. It is a fun way for kids to eat something like a pizza with loads of health benefits.”

Chef Rekha calls it one of her favourite dishes to cook and also says, “I like to keep innovating and try a lot of fusion recipes that I have learnt over the years. This dish is one of those innovative, tasty and healthy fusion dishes.”

Chef Rekha even gave us the full recipe for the dish which you can find below:

Water to knead

Mozzarella cheese, grated
Capsicum, red & green, finely chopped
Olives, finely chopped
Jalapeno, finely chopped

Pizza Sauce
Chilli Flakes
Mixed herbs & oregano

Ø Take ball size dough, as we take for normal paratha, and flatten it. Sprinkle some atta on it.

Ø Spread pizza sauce on flattened dough leaving space on the sides. Amount of sauce depends on individual taste.

Ø Place the pizza stuffing in the centre of the flattened dough and sprinkle the mixed herbs and chilli flakes, per your taste

Ø Take the edge and start pleating bringing to centre, as we do for a normal stuffed paratha.

Ø Join the pleats together and secure tight.

Ø Now we have stuffed ball size dough. Roll the ball dough again to flatten it like the way we do it for paratha. Make sure the stuffing is not popping out.

Ø Place the parantha on a hot tawa and cook normally like a parantha

Ø Brush oil/ghee and keep pressing slightly. Keep flipping unless properly cooked from both the side but do not overcook to avoid the cheese melting.

Ø Serve hot pizza paratha.

Chef Rekha even says that are no real challenges associated with this dish and that it’s really quite easy to make a pizza paratha.
